Comfort Tofu Loaf

1 lb. Tofu, Firm1 cup Dried Bread Crumbs1/2 medium White Onion1/2 teaspoon Garlic Powder4 tablespoons Tomato Ketchup2 tablespoons Soy Sauce1 tablespoons Italian Herb Seasonings1 teaspoons Pepper, Black1/2 cup Carrots1/2 cup Celery
Instructions:
1) Preheat oven to 350°F.
2) Drain and press the tofu for about 15 minutes.
3) Dice up the tofu and put all the ingredients in a food processor, except for the carrots and celery.
4) Blend until smooth. Add the carrot and celery, and blend in the tofu mixture.
5) Put in a greased loaf pan and bake for one hour.
Makes 1 loaf pan, which can easily serve 4-5 people.

I’ve made this twice. I did add an egg so it would set nicely, and boosts the protein a little. The ketchup mixed in gives it a nice flavor (I almost left it out). The second time I made it I minced the vegetables and mixed it with a potato masher, added frozen peas and substituted Worcestershi - 1/13/19
