Keto Homemade Mayo

Ingredients
1 Cup Extra Virgin Olive Oil (Or any other oil you see fit!)2 Large Egg Yolk 3 tsp Lemon juice 1/4 tsp Himalayan Pink Salt (To your taste)
Directions
1. Separate the egg yolks and put into mixing bowl (best if room tempurature!)
2. Add 1 tsp of lemon.
3. Whip up mixture (blender, food processor, hand blender, vigorous hand whisk) until you can see it start too look more thick and creamy...
3b - WHILE this is happening, start putting small drops of oil into the mixture, until you see it start to really emulsify and thicken up.
4. Once you see the mayo thickening up, start a steady stream of oil.
5. Once the oil is all in and blended, add salt and remaining lemon juice to taste.
