Classic Tom Yum Soup

Ingredients
900 mL Chicken Broth 1.75 cup Rooster Brand Coconut Milk 1 tbsp Chili Garlic Sauce (Lee Kum Kee) (by ABNELSON) 8 oz Chicken Tyson All Natural BoneLess SkinLess Chicken Breasts (GS) 227 gram(s) Prawns: raw (by FRESHNUTZ) 225 grams Mushrooms, fresh 1 large whole (3" dia) Tomatoes, red, ripe, raw, year round average 2 tbsp Lime Juice, juice of 1 lime 2 tbsp Fish Sauce 50 grams Cilantro, raw 1 serving kaffir or lime leaves (by HI-NRG)
Directions
POUR broth and coconut milk into
a large saucepan and set over medium heat.
Whisk in chili-garlic sauce.
Cover and bring to a boil.
ADD chicken, mushrooms, tomato and
shrimp and cook, stirring occasionally,
until chicken is cooked through, about
5 min. (If'using enoki mushrooms,
stir in with cilantro at the end of cooking.)
STIR lime juice, fish sauce and cilantro
into soup.
Note: The recipe calls for Kaffir lime leaves, which can be hard to find. Add the zest from a lime instead.
