Chicken Meatballs with Spiced Fruit Sauce

MEATBALLS500 grams (17.5 oz) ground Chicken3/4 cup Brown Rice, raw1/4 cup Oat Bran1 tsp Curry Powder1 large Egg beatensalt and pepper to tasteSPICED FRUIT SAUCE1/2 cup chopped Onion1 clove Garlic minced1 tsp Curry Powder1/2 tsp Cinnamon1/2 tsp Ground Ginger1 3/4 cup canned Tomatoes no added salt1 tblsp Lemon Juice3 tsp Brown Sugar1 tblsp Apricot Jam1 small box (1.5oz or 40g) Raisins1 medium Apple peeled and diced
Cook rice.
Combine chicken, 1/4 cup rice, Bran, Egg, Curry Powder, Salt and Pepper in bowl and shape into small Meatballs. Cook until brown, remove and reserve.
Cook Onion and Garlic for 2 minutes add Curry Powder, Cinnamon and Ginger and cook until fragrant.
Add remaining sauce ingredients (except remaining rice), mix to combine.
Add meatballs, cover and simmer for approx 20 minutes.
Serve on the remaining cooked rice.
