Super Veg Tagine (3.5 servings in each)

Ingredients
2 tsp Cinnamon, ground 2 tsp Cumin, ground1 tsp Fennel, ground1 tsp Pepper, black 150g Apricots, dried 400g Carrots, raw 500g aubergine25g Garlic 3 tsp Ginger Root 400g Onions, raw 400g Parsnips 400g Peppers, sweet, red, fresh 800 g Canned Tomatoes 1 serving Vegetable stock Cube 480 g canned Chick Peas, drained1 tsp Chili Peppers, dried 1 tbsp Rice Bran Oil 4 tsp Paprika 1 tbsp Molasses, blackstrap 1 tbsp Oregano, dried0.5 tsp Rosemary, dried 1 tsp Mint, dried 100 grams Sun Dried Tomatoes
Directions
Fry onions, garlic together, add spices to fry off.

Chop veg into equal parts and add everything to the slow cooker! Chop dried tomatoes and apricots as well.

I used a bag frozen pre-grilled aubergine, but think it would be fine with the length of time it takes to cook, but feel free to griddle yours if wanted.

Cooked on high for 4 hours, low for another 3, then kept warm.

Serve with a protein.
