Green Bean and Ham Stew

1 tbsp olive oil1 large onion chopped1 tsp. thyme1/2 tsp. salt2 large baking potatoes, diced1 1/2 cups ham, diced4 cups vegetable or chicken stock3 cups chopped green beans1/2 cup chopped carrot3 tbsp. dijonpepper to taste
Cook onion, thyme and salt in olive oil until soft.
Add ham and stir until heated through. Add stock and potato. Bring to a boil and reduce to a simmer. Cook for about 25 to 30 minutes, until potatoes are softened enough to start thickening the stew.
Add green beans and continue cooking for about 20 minutes or so. The beans should be soft and have lost that squeaky feeling. Add the carrots, dijon and pepper to taste. Cook about 10 minutes more. Serves 4.
