Healthy n' Happy Homemade Crunch

Ingredients
1.5 cups rolled oats2 Tbsp sunflower seeds4 Tbsp sliced almonds2 Tbsp chopped pecans2 Tbsp raisins or dried fruit of choice1 1/4 Tbsp honey1/4 tsp cinnamon1/4 tsp maple extract
Directions
On a foil lined baking sheet (with an edge), mix together all dry ingredients except raisins.
In a double boiler over medium heat, mix honey, maple extract, and cinnamon together (this makes honey more spreadable).
Pour honey over oat mixture and stir with fork or hands to lightly coat. Spread out over sheet.
Bake for about 15 minutes, until lightly toasted, stirring once during cooking.
Once you remove the cereal from the oven stir in the raisins and let cool.

VARIATION:
Place 1/4 cup buckwheat groats in about 1 cup of water. Soak for 6-12 hours. Rinse, rinse, rinse, until the water is not thick or foggy. Pat dry with towel, and use in recipe, reducing oats to 1 cup.

Makes enough for about 4 servings, 1/2 cup each.
