Stuffed Jalapeno Peppers

Ingredients
2 Pickled Jalapeno Peppers, sliced in 2, membrane and seeds removed1 1/2 Tbs Reduced Fat Mayonnaise2 Tbs finely diced onion (more or less if you'd like)1 oz finely shredded then chopped cheddar cheese
Directions
Get the cheese as small as you can then mix in the onion and the mayonnaise. It should be very stiff, not thin. Slice the peppers in half lengthwise and place the cheese filling inside each pepper. You almost have to use your hands to mold the filling. These are a great little appetizer and not too bad as far as fat and calories.
