Low Carb Ground Beef Stroganoff

Ingredients
2 tbsp unsalted butter 2 cloves of garlic 1 lb 80/20 ground beef chucksalt and pepper to taste 230 grams fresh mushrooms, sliced1/3 cup of water 1 1/4 cup full fat sour cream 1/4 tsp paprika 1 tsp lemon juice 1 tbsp fresh parsley (or 1/4 tsp dried)
Directions
1. Melt 1 tablespoon butter in pan then add garlic and salute until garlic is golden.
2. Add the beef, season with salt and pepper, then cook until browned. Remove beef from pan and set aside.
3. Melt another tablespoon of butter to pan. Add mushrooms and wine/water and cook until liquid is reduced by about half and mushrooms are softened.
4. Remove pan from heat and mix in sour cream and paprika.
Return pan to low heat.
5. Stir in lemon juice and and meat. Add more seasoning if needed.
