Brown rice and raisin pudding

3 egg whites1 egg1 1/2 cups 2% milk1/4 cup sugar1 teasponn vanilla extract2/3 cups brown rice1/2 cup raisinscinnimon or nutmeg
1. In a medium bowl combine egg whites, egg, milk, sugar and vanilla. Beat until combined but not foamy.
2. Add cooked rice and raisins, mix well.
3. Pour mixture into a 1 1.2 quart casserole. Place in a baking pan in the oven. Pour boiled water into baking pan around the casserole to a depth of 1 inch.
4. Bake uncoverd at 325 F for 45 minutes or untila knife inserted halfway between the edge and the center comes out clean.
5. Serve warm or chilled with a sprinkle of nutmet or cinnamon,
