Chicken - Chinese Garlic Eggplant

Ingredients
1 tsp Sesame Oil 3 clove Garlic 1/2 cup, chopped Onions, raw 1 tbsp Sesame Seeds 1/4 cup Soy Sauce 1/5 tbsp Extra Light Olive Oil 9 oz Boneless Skinless Chicken Breast - Raw 1 tbsp Rice Wine Vinegar 1 large Eggplant, fresh 1 tsp Peanut Oil
Directions
Heat a large skillet and saute the cubes of peeled eggplant and then add the onion and garlic in a variety of the oils.

Then added remain sauce ingredients and topped with seeds.

Serve with rice or cauliflower rice. (not in count)

Also added a side of Asian bagged mix with broccoli, snap peas, mushrooms, carrots and water chestnuts.. (not in count)
