Single-serving Keylime Cheesecake

100 g fat-free Quark or Cottage Cheese2 Tbs vanilla-flavored protein powder1 tsp lime juice1 egg whitesplenda/stevia to taste
If using cottage cheese, you'll want to make this in your blender for a smoother consistency.
Preheat oven to 300° F.
Mix your quark or cottage cheese with the protein powder, and lime juice. Taste for sweetness, and add a bit more sweetener if desired. Add egg white and stir thoroughly. Pour into a small baking form (I used the bottom part of my citrus juicer!).
When the oven is heated, place a small pan with about an inch of water in the oven. Set your "cheesecake" pan in this water bath. It will help give a better finished texture.
Bake for 20 minutes, and cool for about the same length of time.

No matter how much sweetner I added all I could taste was the protein powder, which on its own is not tasty, and none of the lime. I tried it twice using a vanilla whey protein powder and the vanilla meal supplement powder (which I use all the time as a yummy shake). Suggestions? - 12/18/10
