Chicken & Veggie Meal Prep

Ingredients
2 cup Brussels sprouts, fresh 2 cup, chopped Carrots, raw 2 cup, cubes Sweet potato 2 cup, chopped or diced Broccoli, fresh 16 oz Tyson boneless, skinless chicken breast 2 tbsp Thyme, ground 2 tbsp Rosemary 2 tsp Pepper, black 4 tbsp Olive Oil 4 clove Garlic 2 tsp Salt
Directions
1. Preheat oven to 220C.
2. Cut sweet potato into cubes and place in 1 corner of oven tray. Cut Brussel sprouts in half and place in 1 corner of oven tray. Slice carrot and place in 1 corner of oven tray. Separate broccoli into florets in the remaining corner of oven tray.
3. Place chicken breasts on baking paper. Coat chicken with 2 tbsp olive oil, 1 tsp salt and pepper, 1 tbsp rosemary and thyme. Wrap paper around chicken and place in the centre of baking tray with veggies.
4. Bake in oven for 25 minutes. Slice chicken when done.
