Mushroom Cheese Quiche

Ingredients
One nine inch pie crust16 oz. Ricotta cheese½ cup of whole milk3 large eggs8 oz white button mushrooms1 small onion, minced3 Tbsp unsalted butter1 tsp kosher saltDash of black pepper¼ tsp grated or ground nutmeg½ tsp cardamom
Directions
Preheat oven to 425*

Melt butter in a sauté pan, and then add mushrooms and minced onion. Sauté until the mushrooms are reduced and the onions have turned a very light yellow. Remove from heat and cool.

Blend cheese and milk until smoothly incorporated. Then add eggs one at a time, blending after each egg. Blend in salt, pepper, nutmeg, and cardamom.

Gently fold the cooled vegetable mixture into the cheese mixture. Pour into your pie crust and bake for 35 minutes at 425*

Crimini mushrooms can be substituted for the buttons.
