Gluten Free Applesauce Scones

3/4 C. rice flour3/4 C. millet or sorghum flour1 scoop vanilla protein powder2Tbs soy flour2 Tbs flaxseed1/2 tsp baking powder3/4 C. unsweetened applesauce1/2 C. water (or slightly less)
Preheat oven to 300° F.
Mix dry ingredients in a mixing bowl. Add the applesauce and stir thoroughly. Add about half the water, and stir. You want the dough thick enough to hold it's shape, but not too stiff. Ultimately it should be the texture of slightly-goopy Playdough. It is gluten-free, after all!
Drop these by large spoonfuls onto a greased baking sheet (or use parchment paper if you have it). Bake for 20 minutes.
Makes 8 scones.
