Zucchini Noodles Scampi for One

1 tbsp Extra Virgin Olive Oil 4 oz Large Raw Shrimp, broiled (1 serving = 4 ozs or 7/8 shrimp) 2 clove Garlic 1/8 tsp crushed red pepper flakes .125 fl oz Lemon Juice .125 fl oz White Wine4 Oz. zucchini 1 tbsp Parsley
1) heat oil in 9 inch sauce pan medium
2) Add shrimp and cook until both sides are pink. remove and set aside.
3) add garlic and pepper. stir constantly for about one minute as not to burn garlic.
4) add lemon juice Wine and bring to a light boil for 3 minutes.
5.) Add zucchini and cook for 5 minutes
6) add back shrimp and heat through
7) season with salt and pepper to taste and top with parsley
