Baked Coconut Chicken Tenders

Ingredients
1 1/2lbs of frozen chicken breast tenders (defrosted)4 oz of unsweetened dried coconut (used the medium size from Whole Foods bulk bin)5 Tbls of unsalted butter1 Tbsp of paprikaSalt & pepper to taste (aprox. 1-2 tsps each)
Directions
Pre-heat oven to 350
Melt butter in a microwave safe bowl and place in a container large enough to dip a chicken piece into.
Mix coconut with seasonings and place in a container or on a plate large enough to hold a couple of chicken pieces.
Dip chicken in butter then dredge in seasoned coconut.
Lay on a baking sheet and sprinkle any remaining mixture on pieces.
Bake 25-40 minutes or until done depending on size of tender pieces and your oven.
Serving size is approximately 3 chicken tenders.

    These were really good. I used half smoked paprika, half Hungarian paprika. I used a mix of coconut flakes and shreds (both unsweetened, of course), and 1 tsp Redmond sea salt. My husband requested all the leftovers for his lunch. - 9/20/13
