Onion Soup with Mozzerala Cheese

Ingredients
16 cup Beef broth, bouillon, consomme 32 fl. oz Sherry, dry 10 medium (2-1/2" dia) Onions, raw 1 tsp Pepper, black 16 oz Mozzarella Cheese, whole milk
Directions
Warm the beef broth and cooking sherry. Slice 10 medium onions and add to broth along with 1 tsp of black pepper. Let simmer for the next 1-2 hours. When ready to serve add 1 cup of soup to a bowl and sprinkle 1 ounce of shredded Mozzarella. If you decide you also want the bread you can toast a slice of my keto rosemary bread and add to the top before the mozzarella. Bake or warm in the microwave until the cheese is melted
