Prepare quinoa in 2 cups of water. Drain and rinse black beans Dice bell pepper (I also like to use 1/4 red onion) Dressing: Cilantro, olive oil, 1.5 tbsp vinegar, 1 tsp salt, 1.25 tsp cumin, juice from one lime
