1.0 cup Kroger Quinoa74.0 gram(s) bell pepper, red, sweet, raw1.5 cup Sweet Corn, Fresh2.0 cup Beans, black5.3 tbsp Extra Virgin Olive Oil
Prepare quinoa in 2 cups of water.
Drain and rinse black beans
Dice bell pepper (I also like to use 1/4 red onion)
Dressing:
Cilantro, olive oil, 1.5 tbsp vinegar, 1 tsp salt, 1.25 tsp cumin, juice from one lime
