Breakfast Turkey Sausage-Egg-Spinach-Feta Scramble

6 large eggs 1/2 large red bell pepper, diced 1/2 medium onion, diced1 cup spinach, shredded2 Tbsp. (or 1/8 cup) feta cheese crumbles 1/4 tsp seasoned salt 1/4 tsp ground black pepper 3 ounces (90 g) brown and serve turkey sausage patties, heated and diced
1. Dice and shred your vegetables.
2. In a bowl, scramble the eggs, salt, pepper and feta cheese
3. Heat the sausage patties in the microwave per package instructions and then dice.
4. Heat up a large wok or skillet and add a very small amount of olive oil.
5. Saute the onions and peppers until the onions are translucent. Add spinach.
6. When spinach has wilted, add sausage and mix thoroughly.
7. Pour in the egg and cheese mixture and scramble to the desired texture.
8. Makes 4-1 cup servings.
