Honey Balsamic Roasted Carrots

10 medium carrots peeled and sliced as necessaryfew sprigs of fresh Thyme2 TBS Honey 2 TBS Balsamic Vinegar 1 TBS Olive Oil 5 sprigs Parsley
Preheat oven to 375F. In a bowl, mix honey, balsamic cinegar, olive oil and seasoning to taste.
On a baking sheet, combine the carrots, thyme and 3/4 of the vinegar mix, making sure you coat the carrots as evenly as possible.
Roast for 15-20 minutes or until the carrots start to caramelize.
Remove sheet pan from oven and turn carrots over and pour on the rest of the sauce. Put back in the oven and cook another 10 minutes or until nicely browned and sticky. Don't over cook!
Serve by pouring over any leftover sauce and a sprinkle of fresh parsley.
