Roasted Red Pepper and Artichoke Pesto

Ingredients
Half Jar Roasted Red Peppers, drained1 small jar artichoke hearts, drained1/3 c parmesan cheese2 Tbsp Light Mayo1 Tbsp Extra Virgin Olive Oilsalt and pepper to taste
Directions
Put all ingredients in a food processor and puree til smooth.

Great over pasta, or as a spread for flat breads.

Makes 8 servings (when used with a pound of pasta), more when used as a spread.
