Griddle Cakes

2 large Egg white, fresh 1 cup Flour, white 2 tsp Baking Powder 1 tsp Salt 1 tsp Cinnamon, ground 2 tsp Granulated Sugar 1 tsp Vanilla Extract 1 tbsp Crisco Pure Vegetable Oil .5 cup (8 fl oz) Water, tap
Beat eggs whites to soft peaks, set aside.
Sift flour, baking powder, sugar, salt, cinnamon together. Add the 1/4 cup of water, vegetable oil and vanilla to the dry ingredients. Mix and add remaining water until most of the lumps are gone. Next fold in the beaten egg whites. If you like a thinner batter you can add more water a tablespoon at a time.
Place a little oil to the griddle/pan. Heat on medium high pan should be ready when you place a drop of water and it "dances" on the pan. Use a 1/8 or 1/4 cup batter for each griddle cake.
Turn when top looks dry and most of the bubbles has popped. Cook second side for 1 to 2 minutes or until cake moves easily off pan.
Top with your favorite syrup . For a healthy option try fresh fruit, homemade low sugar berry compote or low sugar jam.
