1 lb italian turkey sausage, browned 1 package (16 oz) turkey pepperoni, cut in quarters 24 ounce 1% fat cottage cheese3 cups baby spinach, chopped2 cups part-skim shredded mozzarella cheeseadditional 1/2 cup mozzarella to spread on top of dish16 ounces whole wheat rotini (cooked to firm texture)Homemade pasta sauce: 2 tb olive oil 1 cup chopped onion 1 tb minced garlic 2 - 28 oz cans crushed tomatoes 2 tb honey 1 tb each italian seasoning, oregano, basil
Mix all the ingredients together (see below to make pasta sauce). Top with 1/2 cup mozzarella. Bake in 350 degree oven for 30 minutes.
Pasta sauce: Saute chopped onion and garlic in olive oil until softened. Add tomatoes, honey, and herbs (adjust herbs to preferences). Salt and pepper as needed. Simmer for 10 minutes, stirring frequently.
