Olive Oil Tortillas

2 cups all-purpose flour1 tsp salt6 oz water4 Tbl olive oil
Combine all ingredients in a medium bowl. Knead in the bowl until a smooth ball- apprx 10-15 times. Dough should not be too wet - add a little bit of flour if sticky. Cover the bowl and let dough rest for 10 minutes.
Heat a cast iron skillet over medium heat.
Divide dough into eight equal portions. On a lightly floured surface, roll each portion into a circle, approx 6-7 inches.
Carefully lay one tortilla in the heated pan. Cook for approximately 1 minute. Your tortilla should be bubbly. Turn the tortilla over with a spatula. The tortilla should see light brown spots. Adjust heat a little lower if the spots are dark or a little higher if you do not see enough color. Cook on the second side for approximately 30-45 seconds. Continue until all the tortillas are cooked. Stack them under a clean kitchen towel to keep warm. Serve immediately.
