2 serving 10 baby carrots raw .5 cup White Rice, long grain, cooked 2 cup, sliced Zucchini 1 medium whole (2-3/5" dia) Red Ripe Tomatoes 1 cup, chopped Onions, raw 4 tsp Knorr Chicken Bouillon 3 medium (2-1/4" to 3-1/4" dia.) Potato, raw 24 oz 80/20 ground beef chuck
Blend tomato and 3/4 cup chopped onion with water. Put in large pot with 6 cups water. Bring to a boil adding 3 tsp of Knorr to flavor soup. Place baby carrots, sliced zucchini and potato's in pot and turn down heat to simmer. Place ground beef in a bowl. mix in cooked rice, remainder of onion (finely chopped), remainder of Knorr and seasoning such as garlic powder, pepper and salt. Form tablespoon size meatballs with your hands and gently drop into simmering soup. Continue until all meat is in pot. Cook for 10 to 15 minutes.
