Simple German Potato Salad with cucumbers

Ingredients
750 grams Potato, raw 1 medium Cucumber (peeled) .75 cup Vegetable Broth 2 serving Oil, Great Value Pure Canola Oil,1tbsp(14g} 1 dash Salt 1 dash Pepper, black 1 tbsp Parsley, dried 3 tbsp Onion (raw), chopped 2 tbsp Cider Vinegar 1 tsp Granulated Sugar
Directions
Boil the potatoes in skin until they are soft enough to pierce them with a fork but don't overcook them where they would fall apart when you peel them. Cool off, peel and cut into thin slices. Add the thinly sliced cucumbers and the rest of the ingredients. Mix well. Let stand for at least an hour.
