Vegan Coconut curry

Ingredients
1 cup, chopped Onions, raw 3 cup, pieces or slices Mushrooms, fresh 1.75 cup, chopped Sweet peppers (bell) 3 clove Garlic 2 cup Nature's Promise organic chickpeas (garbanzo beans) (by THINCEIL) 3 tbsp Cilantro, dried 9 tsp A Taste of Thai Red Curry Paste (by MAMARTISTEACHER) 4 cup Coconut milk (light) 2.25 serving Swanson's organic veggie broth,1 Cup (by BULGEBATTLE1) 1.5 cup Earthbound Farm - Mixed Baby Greens
Directions
!. saute onion, garlic, peppers, and mushrooms
2. add red curry paste, chickpeas, and cilantro
3. stir in and cook everything together for two-three mins
4. add veggie broth, and coconut milk (lime juice if desired)
5. bring to a boil
6. add greens and fold into the curry for 1 minute
7. serve
