Ingredients
1.0 tsp Basil2.0 tsp Garlic powder1.0 tsp Oregano, ground1.0 tsp Parsley, dried1.0 tsp Pepper, black1.0 tsp Salt3.0 tsp Garlic1.0 medium (2-1/2" dia) Onions, raw2.0 medium Zucchini, baby2 lbs boneless, skinless chicken breast3.0 oz Tomato, grape (3oz = appro 12 tomatoes)1/2 (C) Vinegar, Red Wine 8.0 serving Sweet mini peppers (3)5 tbsp(s) Avocado Oil - Chosen Foods - 1 TBSP
Directions
In a blender, mix the vinegar, oil, herbs, spices and garlic on pulse for 3-5 seconds or hand mix and set aside. Cube the chicken in 1 1/4 squares and add to a plastic food storage bag and set aside. Cut mini peppers in 1/2, cut onion in chunks and slice zucchini into 1 inch chunks and add about 10-12 grape tomatoes in a plastic food storage bag. Add 2/3 of marinade mix to the chicken and add the rest to the vegetables. Marinate in the refrigerator for at least 2 hours, preferably overnight. Assemble skewers as desired and grill over medium until cooked thoroughly. If you have leftover vegetables just add them to skewers and grill. Serving Size: 1 skewer
