Flaxseed Meal Pancakes (Low Carb)

Ingredients
1 cup Organic freshly ground Flax Seed Meal 4 large Eggs, beaten 0.33 cup Half and Half Cream 1 tsp Baking Soda 1 TBSP Lemon Juice 1 tsp Vanilla Extract 1 tsp Cinnamon, ground
Directions
Mix together all the ingredients in a bowl. If you need it sweeter (I don't because of the toppings I add) consider adding your sweetener of choice, but note they are not included in the counts).

Fry on a griddle the way you would normal fry pancakes.

    I ate 2 servings. Added a half cup of blueberries and cooked the pancakes in butter. Also added more lemon drizzled over the top with butter. With lots of fruit this is good, high fibre.
