Marka's Cheddar Chowder

Ingredients
2 cups boiling water1 1/2 cups cauliflorets1 cup diced potatoes1/2 to 3/4 cup sliced carrots1/4 to 1/2 cup sliced celery1/4 cup chopped onionsalt and pepper to taste1/4 cup light margarine1/4 cup whole wheat flour2 cups (8 oz) low fat shredded Cheddar cheese1 cup cubed ham (optional)2 cups skim milk
Directions
In saucepan- combine water, vegetables, salt and pepper. Cover and simmer 10 minutes. Do not drain. In large saucepan melt margarine. Stir in flour, then milk, heat to boiling. Continue simmering, stirring constantly, until thickened. Add Cheddar cheese and stir until melted. Add undrained vegetables and ham. Heat through but do NOT boil. Enjoy!
