Directions
Saute vegs til tender in half EVOO, remove to plate Mix eggs well with water Cook eggs omelet-style in other half of EVOO Add gorgonzola, cooked shrimp halved lengthwise, asparagus, vegs Cook til cheese melted, inside ingredients are warm Top with yogurt mixed with lemon juice Finally, top with salt, pepper, Tony Chachere cajun seasoning and chives
