Gorgonzola shrimp asparagus omelet

2.0 serving Large eggs4.0 medium (4-1/8" long) Scallions, raw0.25 cup, chopped Onions, raw1.0 pepper Serrano Peppers2.0 clove Garlic4.0 large Shrimp, cooked3.0 tbsp Gorgonzola Crumbles0.5 serving Bertolli EVOO (1 tbsp)0.12 serving Chobani 0% Plain Greek Yogurt (5.3 oz)8.0 spear, small (5" long or less) Asparagus, fresh
Saute vegs til tender in half EVOO, remove to plate
Mix eggs well with water
Cook eggs omelet-style in other half of EVOO
Add gorgonzola, cooked shrimp halved lengthwise, asparagus, vegs
Cook til cheese melted, inside ingredients
are warm
Top with yogurt mixed with lemon juice
Finally, top with salt, pepper, Tony Chachere cajun seasoning and chives
