8 oz. boneless, skinless chicken breast3 c finely shredded romaine lettuce2 finely chopped red bell peppers4 tbsp finely shredded basil2 tbsp pumpkin seeds for garnish1/3 c craisins for garnishslice chicken breast into small pieces for saute. add to hot frying pan and cook until done.while chicken is cooking, shred romaine, chop peppers and basil - add to bowl.when chicken is done cooking, set aside to cool.to make dressing, combine peanut butter, soy sauce, honey, rice wine vinegar, and hot sauce in a bowl - whisk until thoroughly blended. pour over salad mixture, toss well. add chicken, pumpkin seeds and craisins - toss well and serve.this is a great main course salad, for either lunch or dinner - hope you enjoy!
