Creamy Greek Yogurt Cucumber Salad

26.8 oz Cucumber (about 4 small cucumbers)3 tbsp Scallions, chopped (about 3 medium) 1 1/2 cups Plain Non-fat Greek Yogurt3/4 cup White Balsamic Vinegar1/4 tsp Onion powder 3/4 tsp Garlic powder 1/4 tsp black Pepper1 tbsp Dill, dried
1. Peel alternating stripes down cucumber leaving some of the skin. Cut in half lengthwise and then slice thinly with knife. Alternately, don't cut and slice cucumbers on a mandolin then cut in half. Place cucumbers in a large shallow container or bowl.
2. Chop scallions and add to cucumbers.
3. In a small bowl mix remaining ingredients until well blended and pour over cucumbers.
4. Chill and allow to marinate at least 1 hour before serving - normally several hours if you have the time.
