1 small cucumber chopped1 small zucchini chopped1/2 large onion chopped1 cup chopped sweet red bell pepper2 Tbsp. dried Cilantro2 Tbsp. lemon juice1/2 tsp. salt1/2 tsp. pepper6 Tbsp. Bernstein's Light Fantastic Roasted Garlic Balsamic Salad Dressing
Chop cucumber, zucchini, red bell pepper and onion. Put ingredients into medium bowl and add remaining ingredients. Stir well to coat with dressing and mix spices. Refrigerate 1 hour before serving. Makes approximately 8 servings - 1/2 cup each
