Low Carb Yellow Squash Casserole

2 cup YELLOW SQUASH, boiled and drained1 small Onions, chopped3 tbsp unsalted Butter, melted2 tbsp Heavy Whipping Cream 5 1/2 tbsp Aldi Fit & Active Liquid Eggs Whites1/2 cup, shredded Mexican Cheese, queso chihuahua 1 tsp Mrs. Dash (R) Garlic & Herb Seasoning Blend 1 dash Pepper, black 4 oz Pork skins, crushed
1. Boil, drain and mash yellow squash.
2. Use a large bowl to combine prepared squash, chopped onion, melted butter, heavy cream, egg whites, grated cheese and seasonings to taste.
3. Place in a buttered casserole dish and cover with crushed pork skins.
4. Bake uncovered at 350° F oven for about 30 minutes.
5. The entire casserole contains 23 gm of carbs.
