Quinoa with shrimp & veggies

Ingredients
1 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry 1.5 cup Squash - Yellow and Zucchini 0.5 tbsp Extra Virgin Olive Oil 6 oz Tomato, grape (3oz = appro 12 tomatoes) 10 leaves Basil 4 clove Garlic 1 large Onions, raw 1.25 cup (8 fl oz) Chicken Broth 0.25 tsp Pepper, red or cayenne 16 oz Shrimp, raw
Directions
Rinse & cook quinoa in instant pot 2 minutes at high pressure, 10 minutes natural release. Meanwhile, slice onions into thin shreds and zucchini into 1/4” slices. Using 1/2 T. Olive oil, sauté onion and zucchini together until lightly browned. Halve grape tomatoes and add them. In a separate skillet, toss peeled and deveined shrimp with 1/2 T. Olive oil, garlic and red pepper. When barely cooked through, combine with veggies and quinoa. Serving Size:
