Country Meatloaf

Ingredients
1 1/2 lbs 91% lean ground beef1 cup Herb flavored Stuffing mix1 can (10 3/4 ounce) Cream of Mushroom Soup1 large egg, beaten1 medium onion, chopped2 Tbsps. Kroger reduced fat Sour Cream.
Directions
Preheat oven to 400 degrees.

Combine ground beef, stuffing, half the can of soup, egg, & chopped onion. Put in a 9 X 5 loaf pan & bake for 35 minutes at 400 degrees. Mix remaining soup with sour cream. After the 35 minutes in oven, take meatloaf out & spread soup/sour cream mixture over the top. Bake an additional 5 to 10 minutes.

    Tasty, but we changed a few things. Ground turkey instead of beef, and low fat cream of mushroom soup. I also added ketchup to mine, but my husband preferred his without. EXTREMELY easy to make. - 7/23/08
