Easy Chicken Provolone

Ingredients
4 boneless, skinless chicken breasts, thawed1 or 2 cans diced tomatoes w/ basil, garlic, oregano1 Tbs. garlic powder (to taste)1 tsp. salt (to taste)4 slices non-smoked provolone cheese
Directions
Preheat oven for 400 degrees. Lightly mist baking dish with olive oil or canola spray. Sprinkle garlic powder and salt across dish and lay fresh/thawed chicken breast in dish. Sprinkle chicken with garlic powder and salt (optional step). Pour diced tomatoes over chicken, making sure to keep most of the tomatoes over the chicken in order to retain moisture. Bake for 30 minutes (or until chicken is well cooked) and take out of oven. Push tomatoes off of chicken breasts, leaving them in the dish, and lay a piece of provolone on top of each piece. Bake for additional 5 minutes or until cheese is gooey! Remove from oven and spoon the cooked diced tomatoes over cheese and serve. Makes 4 servings, but can be easily modified for more or less!
