1 Cup thawed frozen corn1 Ripe mango, peeled, seeded, diced in .5 inch chunks2 Inch chunk cucumber unpeeled and diced2 Plum tomatoes (or 6 Grape tomatoes) diced.25 Cup diced red bell pepper.25 Cup Diced red onionJuice and zest of 1 lemon1 Tablespoon olive oil1 Tablespoon rice vinegar.25 Teaspoon garlic powder.25 Teaspoon crushed red pepper.25 Teaspoon table salt.25 Teaspoon fresh ground black pepper.25 Cup chopped cilantro
Chop and prepare all ingredients. Just throw them together in a bowl and serve. Serving size is 2 Tablespoons.
