Refried Black Beans

Ingredients
1 T canola2 large onions, chopped4 cloves garlic, minced1 jalapeno, minced1 splash lemon juice4 cups (2 cans) black beans1/2 cup salsa1 t salt (to taste)1/3 cup part skim mozzarella cheese2 T cilantro, chopped
Directions
Brown onions in oil over medium heat. Add garlic and jalapeno, cook for a minute. Add rinsed & drained black beans, mash. Add splash of lemon juice, salt, and salsa, combine. Add cheese and let melt. Turn off heat and add cilantro. Taste and re-season if necessary!

Makes: 4 HEARTY dinner servings

Serving suggestions/variations:
- as dip with chips
- rolled in tortillas for yummy burritos
- rolled in egg roll wrappers and pan-fried for chimichangas
- add more veggies- esp bell pepper and carrots!
- add spices- 1/2 t of roasted cumin or coriander
- mix with rice and stuff tomatoes or bell peppers
- serve with yogurt in place of sour cream
- blend yogurt and avocado to make a great tangy 'guacamole' replacement!

    Absolutly wonderful. I LOVED these, I left out the jalepeno (weak stomach) but put some lettuce and tomato on it and wrapped it up in a tortilla. Yumtastic. Hefty portions is right though, wow almost to much for one sitting - 3/19/09

    I agree it's a lot for one sitting- I tend to spread my meals out a bit, so I usually eat a little and then have the rest later. I like to spray a tortilla with just a little bit of oil and brown it over medium-low heat until it gets almost crunchy, then use it like a chip :)

    I tried fresh cooked black beans in order to reduce the sodium content. Mashing was not as complete as if I used canned but the consistency was still good. Delicious! Will make again. - 10/18/10
