1 cup Country Choice Organic Old Fashioned Oats 1 tbsp chia seeds 3 tbsp Maple Syrup 1 tbsp Earth Balance Vegan Butter 1 TBS (by MISO54) 8 oz Almond Breeze Almond Milk, Vanilla 1 serving Large Michigan Jonagold Apple 4.82 grams Corn Starch 0.25 tsp Himala Salt - Pink Sea Salt (by DASANI4ME) 1 tsp Cinnamon, ground 0.25 tsp Apple Pie Spice (by REBECCAF62) .25 tsp Ginger, ground 1 tsp Vanilla Extract 2 tbsp water
For the oats:
Combine oats, almond milk, maple syrup, chia seeds, vanilla extract, cinnamon and salt in a medium sized bowl and mix well. Cover and refrigerate overnight.
For the apple compote:
Add butter, apples, cinnamon, ginger, apple pie spice and maple syrup to a medium saucepan. Stir over medium heat for 3-5 minutes until apples are very tender.
Whisk water and cornstarch together in a small bowl, add to pot and continue to cook for another 1-2 minutes until mixture thickens. Remove from heat and cool completely.
To serve, spoon oats into a cup and top with apple compote.
Serving Size: makes 2-9.075 oz servings
