Ingredients
2 Firm medium size tomatoes, chopped2 cucumber, diced1/5 medium size Onion4 sprigs of Parsley for garnish, chopped2- 3 sprigs of Mint1/2 cup of lemon juice4 tbsp Extra Virgin Olive Oil2 large whole or white wheat Pita breadSalt to taste
Directions
1) bake the pita bread under 350 degree for 2 -3 minutes. Be careful not to burn
2) break the bread into bite size.
3) mix the vegetables
4) add the lemon juice and the olive oil.
5) add the bite size baked pita bread
6) salt to taste
7) toss
and enjoy

This is a a healthy fresh salad, with a crunch. Great with BBQ
