chunky vegetable spaghetti sauce

Ingredients
2 Tbs Extra Virgin Olive Oil1/2 large onion chopped1 large baby zucchini chopped1/2 medium eggplant peeled and chopped1 large sweet red pepper chopped2 14.5oz. cans Italian Diced Tomatoes w/basil and garlic1 8oz. can tomato sauce
Directions
heat olive oil in large non stick skillet, add chopped onion and red pepper, saute until tender, add chopped zucchini and eggplant, add both cans Italian Diced Tomatoes and 1 can tomato sauce. Bring to a rapid boil, reduce heat and simmer for 15 minutes.

Serve over pasta or rice.
