Cream of Broccoli Deluxe

Ingredients
2 tbsp Better than Boullion Vegetable Base (by APPIFANIE) 1 cup cashew nuts, raw (by STEELCAT91) 1 cup, chopped Onions, raw 1 stalk, large (11"-12" long) Celery, raw 1 cup, chopped Carrots, raw 2 clove Garlic 1 serving Red Bell Pepper (one medium pepper) 2 medium (2-1/4" to 3-1/4" dia.) Potato, raw 1 bunch Broccoli, fresh
Directions
Puree 1 cup stock with cashews
cook onion, celery, and carrot in 1 cup stock 5 minutes
Add garlic, peppers and potatoes and simmer 2 more minutes
Add remaining 4 cups stock, broccoli and seasonings, bring to boil, cover and simmer 10 minutes until veg is soft
add cashew mixture and stir to mix, remove from heat
puree half of soup in batches, return to pot and stir well
