Avocado Green Goddess Dressing

Ingredients
1 soft avocado, peeled and pitted1 c mayo (lite)2 tbsp green onion1tbsp lemon juice1 tbsp apple cider vinegar2 cloves garlic2 tbsp white sugarsalt and pepper to taste
Directions
In a blender combine all ingredients and puree until smooth. Chill at least an hour. The longer it chills the better the flavor.
For anchovy lovers add 5 anchovy filets to ingredients.

Makes 16 2 tbsp servings

    This is very sweet and very mayonnaise-y tasting. I think next time I'll use honey instead of sugar and cut the mayo to half. - 6/12/09
