Zuchinni Banana Muffins

1 cup Zuchinni, grated1.5 cups bananas, mashed (about 3 bananas)1 egg1 tbsp veg oil1/2 cup unsweetened applesauce1/4 cup sugar substitute like Splenda1.5 tsp baking powder1.5 tsp baking soda1.5 cups whole wheat flour1 cup quick cooking oats1/2 tsp salt
1. Oven at 350F
2. Spray muffin tin
3. Mix banana and zucchini. Add Sugar Substitute, egg, oil, applesauce.
4. In seperate bowl combine dry ingredients
5. Add dry to wet until just combined
6. Bake 25-30 minutes
7. Let rest for 5 min then cool on rack.
