1 cup, chopped Kale 1 cup Spinach, fresh 0.5 cup Great value Artichoke hearts 4 oz Tyson boneless, skinless chicken breast 0.35 cup Coconut Milk (Silk) 0.5 cup (8 fl oz) Chicken Broth 0.5 tsp Paprika 0.5 tsp Oregano, ground 0.5 tsp Onion powder 0.5 tsp Garlic Salt 0.25 cup, chopped Onions, raw 0.5 tsp Garlic clove raw 1 1tsp Olive Oil 1 Serving(s) Olive oil cooking spray
Add the 1 teaspoon of olive oil to a 12” skillet with onions and garlic. Cook until fragrant and translucent. Pound chicken breast until flattened, cut in half and add some cooking spray then mix spices and rub on chicken then cook for about 6 minutes on each side until cooked through. Remove chicken to a plate and cover with foil to keep warm. Add kale artichoke and spinach. Cook until greens start to wilt. Add chicken broth and coconut milk stir and simmer for about 3 minutes until sauce thickens and reduces. Add chicken back in and cook for another 1-2 minutes and ser
