Creamy celery soup (vegan)

0.5 medium onion, raw (diced small)2 tbsp Extra Virgin Olive Oil 1 leek (trimmed and diced small)8 medium stalks of celery, raw (diced small)3 cloves garlic (minced)950ml vegan stock 75ml full fat tinned coconut milkSalt (only if required, stock is probably salty enough)
Saute onion, leek and celery for 10 mins. Add garlic and saute 1-2 mins. Add stock (and salt if nec). Bring to boil. Reduce heat and simmer for 20 mins. Remove from heat. Add coconut milk. Blend to required consistency.
