Multigrain Pancakes

2 cups Multigrain Pancake Mix (such as Trader Joe's)1 cup Nonfat Milk1/2 cup Egg Substitute1/8 cup Applesauce4 tsp Splenda
1. Blend all ingredients together using a wire whisk until smooth.
2. Get griddle or pan hot and spray with cooking spray.
3. Pour 1/4 cup of batter per pancake into hot pan.
4. Cook until bubbles start to pop in center of pancake, flip and cook for about 30 seconds more or until golden brown on both sides.
5. Enjoy!!

My kids like chocolate chip pancakes sometimes, too. Add 1/2 Tbs of chocolate chips to a pancake after pouring batter into pan, and cook as usual. 1/2 tbs of semi-sweet chocolate chips will add 35 calories, 2 g fat, 1.3 sat fat, 0 mg cholesterol, 4.5 carbs, .5 g fiber, 4 g sugars and .5 g protein per pancake.
